This one is for the spice lovers out there! Our ode to this iconic Sichuan dish is loaded with seasonal veg—in this case summer beans, like long, wax, and broad beans—as well as organic cremini mushrooms and crumbled tempeh. Instead of regular tofu, which tends to lose its silky texture when frozen, we’ve subbed in chewy tofu sheetsalso known as yuba—which lend a satisfying chewy bite!

Prepare rice (provided) according to package instructions. Reheat Mapo with 1/4 cup water in a covered pot over medium heat, stirring occasionally, until contents are simmering. Remove lid, reduce heat to low, and simmer gently uncovered for 2-3 minutes before serving over rice.
