Made with heirloom blue corn masa, these empanadas are filled with butternut squash, sweet corn, pinto beans, and gooey Oaxaca cheese.

Roasted Vegetables
To round out this meal, grab whatever's in season (we love broccolini). Toss generously with olive oil, salt, and freshly ground black pepper then roast in a 400° degree oven, checking every ten minutes until the veg is tender and deep brown in spots. Finish with salt to taste.

Beans
Simmer up a pot of beans (pinto, black, cranberry...whatever's around!) in broth, adding in the herbs and aromatics of your choosing. This makes for a delicious, protein-packed side.
