CLAM CHOWDER

Dreamed up on a trip along the Maine coast, our version of this classic soup starts with a base of onion, leek, clam broth, and cream. Then we add bacon lardons, fingerling potatoes, fennel, and Bar Harbor clams. 

 

For an extra silky base, we thicken the broth with a potato cream instead of the typical, heavier flour roux. 

  • Bar harbor clams
  • Hudson harvest bacon
  • Local fingerling potatoes

Reheat with 1/4 cup water in a covered pot over medium heat, stirring occasionally, until contents are simmering. Remove lid, reduce heat to low, and simmer gently uncovered for 2-3 minutes before serving. Add more water, ¼ a cup at a time, to thin soup if necessary. Ladle into bowls, garnish, and enjoy.
