We teamed up with our friends and fellow Gramercy Tavern alums behind Rolo’s, a new restaurant in Ridgewood, Queens, on this limited-edition tomato pie. Inspired by the pizza shops found on every corner in Rome, we start with a perfectly chewy, fluffy, and crispy sourdough base that gets its texture from a slow rise. On top we brush a creamy tomato sauce and scatter roasted organic delicata squash and fresh rosemary.
Limited-edition sourdough collaboration with fellow Gramercy Tavern alums and friends from Rolo's pizzeria. With Delicata Squash, pink sauce, and fresh rosemary. (vegetarian)
Fresh herbs (rough chop), Ragù Bolognese, Eggplant Marinara
Flour, Water, Squash, Tomato, Cream, Extra Virgin Olive Oil, Tomato Paste, Honey, Sea Salt, Rosemary, Yeast. Contains: Milk, Wheat.
Remove plastic packaging. Bake dish on a sheet pan in preheated 400° oven for 45-50 minutes, until heated through.  Let cool 10 minutes before serving.
