We simmer the cobs  for hours in a white wine broth then add a touch of smoky heat with pasilla and costeño chiles. Medallions of spicy pasture-raised pork sausage from the Butcher Girls make this a hearty meal. Just BYO crusty bread for dipping!

  • Spicy pastured pork sausage

Reheat with 1/4 cup water in a covered pot over medium heat, stirring occasionally, until contents are simmering. Remove lid, reduce heat to low, and simmer gently uncovered for 2-3 minutes before serving. Ladle into bowls, garnish, and enjoy.
