Inspired by the perfect simplicity of this classic boulangerie order, we created our own version complete with a thyme-Gruyère béchamel and a chewy baguette from our French friends at L’Imprimerie. Not one, but two hams in this sandwich: Smoking Goose spice-brined ham and La Quercia prosciutto. Huse-pickled mustard seeds provide a bright, slightly bitter pop for balance.

You can’t go wrong with a simple side salad made from farmers market greens. Tear the greens into big pieces and lightly dress with a simple vinaigrette. Ours goes something like this: 1 part acid (vinegar or lemon juice), 3 parts good olive oil, a bit of dijon mustard, a few drops of maple syrup, salt + pepper.
