Lamb Ragù with Handmade Pappardelle
 
Introducing our first Pasta Special collaboration with Gramercy Tavern!  We’ve captured the magic of that iconic restaurant for your freezer, so you can have a very special dinner at home (with very little effort). 

The dish: a rich and meaty ragù made with twice-braised lamb shoulder and a harissa spice mix. Lemon confit and Castelvetrano olives lend brightness, and local Swiss chard adds earthy vegetal flavors. Serve with handmade pappardelle (included).

Set a pot of heavily salted water to boil. In a separate pot, place pasta sauce and 2-3 tbsp water over medium heat, and cook covered until contents are simmering. Drop frozen pasta into boiling water, stirring occasionally, for 4-5 minutes. Drain pasta, reserving a small amount of pasta water, and add to sauce. Add a ladle of pasta water to the sauce pan, increase heat to medium-high, and toss to coat. Season to taste!
