Inspired by the moussakas served in Greece and Turkey, this beautiful main features roasted organic eggplant, pasture-raised lamb, a creamy Mornay sauce, plus loads of warming spices like dried mint and cinnamon (from the spice-virtuosos at Burlap & Barrel).

Preheat oven to 400° and remove plastic packaging. Bake dish on a sheet pan in center of oven for about 50 minutes, until moussaka is cooked through and top begins to brown. Let cool 10 minutes before serving.
