These tamales start with a soft and flavorful masa made of freshly ground heirloom corn from our friends at Brooklyn’s Sobre Masa Tortilleria. Then we stuff them with your choice of two housemade fillings:
-Roasted organic cremini mushrooms + butternut squash in a mole of peanut, chile, and date
-Local, pasture-raised brisket braised in chile broth and dressed in a mild red salsa

Mexican Crema
A dollop of Mexican crema adds some tart creaminess to round out this dish. We use labne, sour cream, Mexican crema, and Greek yogurt interchangeably. Whatever you have on hand will work just fine!

Green or red, spicy or mild, salsa is the ideal companion for these beautiful tamales. If you aren't lucky enough to live near a Mexican grocery store where you can buy the fresh stuff, look for high-quality jarred salsa at any specialty grocer…or make your own!
