We teamed up with chef Ana Sortun of beloved Boston restaurants, Oleana and Sofra, on this exquisite take on the traditional Greek dish. Made with fresh, organic spinach and herbs, creamy sheep's milk feta, a flakey phyllo shell and a spice blend that comes from the amazing sourcers at La Boite.

We love to pair this spinach pie with any soft flatbread. The ideal is a stack of fluffy pita quickly warmed in the oven, if you can get your hands on some. If not, a baguette or sourdough batard will more than do the job!

Chop tomatoes and cucumbers the way you like to (we're fans of a smaller dice) and toss with crumbled feta, lemon, and a tasty olive oil. If you've got fresh herbs like oregano or parsley on hand, it's worth the extra effort to finish with a sprinkling on top.
