The Classic Pizza is for the purists. It starts with a long-fermented dough and layers of local tomatoes, fresh mozzarella cheese, and EVOO for a restaurant-quality pizza straight out of your oven in minutes.

Grated Parmesan
We love to grate some fresh Parmigiano Reggiano on this dish right before serving. Don't have parm? Any salty, hard cheese will do here. We recommend using a microplane to create a nice fluffy dusting of cheese.

Green Salad
We love to use seasonal leafy greens from the farmers market for a simple side salad. Tear the greens into big pieces and lightly dress with a simple vinaigrette. Our recipe: 1 part acid (vinegar or lemon juice), 3 parts good olive oil, a bit of dijon mustard, a few drops of maple syrup, salt & pepper.

Chile Flakes
A bit of heat really makes these pies sing...if that's your kind of thing. Any chile you have around will do the job, but our absolute favorite (and a key ingredient in many of our dishes) is the smoked chile flakes from Daphnis & Chloe.
