A craveable dish inspired by the seriously scrumptious noodle soups of Southeast Asia. We make this coconut curry broth with a heady mix of turmeric, ginger, lemongrass, galangal, and more. To that we add tofu in two forms – puffed cubes and sheets of yuba – and blanched veg like baby bok choy, long beans, and pea shoots. Serve with the included flat noodles for that perfect slurp.

Prepare noodles (provided) according to package instructions. Separately, reheat soup with 1/4 cup water in a covered pot over medium heat, stirring occasionally, until contents are simmering. Season to taste with salt and squeeze of lime. Divide noodles among soup bowls. Ladle soup over noodles, garnish, and enjoy.
